Meet your baker
I'm Mike, a resident of East Portland for 15 years, and am a semi-professional baker. I love making bread and set out in 2019 to make the best bread I could with a residential kitchen and simple tools. Now I am bringing that bread to my community.
Besides bread and baking, I love sailing, camping, gardening, playing music, cooking for people, playing table top role-playing games, surfing, and hanging out with my dog.

With Bread Box, I want to make great, artisanal bread with freshly milled flour available to East Portland residents. I will periodically add and remove bread options based on what is selling and finding new recipes worth sharing. The best way to stay up to date is to follow on Instagram @bread_box_pdx.


The ingredients
Get out what you put in
I will strive to always use the highest quality flour that I can find, milling it fresh whenever possible. Those include Bob’s Red Mill, King Arthur, Sun Gold Farms, Naturevibe and others. Beyond the flour, any inclusion in the bread will also be as high a quality and as local as I can find.
Delivery areas
Delivery is free if you live in east Portland north of Johnson Creek, and south of Marine Drive and West of Gresham. If you live outside of that, there will be an small delivery charge. Right now, delivery area is based on your ZIP code, the 5 digit version only (more than that and you will get an error).
Some things to know...
Loaves: All loaves are either:

Boules - which means they are round loaves

Batards - Loaves that are oval in shape

Pan loafs - Sandwhich style bread

What is levain?: This is the natural leavening made when combine wheat flour, water, and time. It’s the magic that makes the bread rise, have rich flavor, and makes it easier to digest than quick-rise yeasts.​
Delivery times: After 5pm on Monday and Friday and after 3pm on Saturdays.

Sometimes I go on vacation, get sick, equipment breaks, or am all booked for the date of your choice. I'll try my best to work something out if this is the case. I will list the dates at checkout that I cannot make deliveries or have pickup available.
